Thoughts on a Thursday 1-9-2020

New Animalbook

We are getting rain. We had some last night, we’re having some today, severe weather possibly tomorrow, then maybe a wintry mix Saturday. I wish that Mother Nature could do this moisture over Australia…

Between storms, my husband and I drove to Ft. Smith this morning to leave our first donation of the year to the Veterans Thrift Town Store. I am really impressed with the people who run this place. The store is always clean, and the people who work there smiling and helpful. The people in the back who help us with our donation are always really nice. We now donate most everything we have there.  If you live in the area, their address is 3500 Jenny Lind Road, Suite B, Fort Smith, AR 72901.  Their phone number is (479) 783-7225. They are open Monday through Saturday, 9am to 6pm.

I am doing better with my keto eating plan efforts and my exercise.  I just took one of our favorites – an egg/sausage/cheese bake – by Suzanne Ryan – out of the oven for our dinner tonight. My husband actually requests this dinner. I serve it with a side veggie or a salad. Delicious. I’ve been doing lots of yoga lately to try to straighten out my back. It’s working. I’m almost back to normal now. A twinge, when I bend forward, like to pick something up off a table, but otherwise good. I’ll try to add my elliptical to the mix very soon.

I’m going to try another keto bread recipe probably tomorrow. The loaf I’m finishing is fine, but my husband doesn’t care for it. I would LIKE to find one that both of us enjoy. The search continues…. oh- I almost forgot to tell you! I’m on the hunt for Crepini Egg Thins with Cauliflower. Walmart usually carries them, but is out of stock at the moment. I’m planning to try using them as a wrap in place of sandwiches, since trying to eat things from rolled up lettuce isn’t really working for me.

It is dark outside, and it’s only 4:30! Looks like we’re in for another storm.

I honestly can’t imagine myself not reading.

I guess I’m biased, because I trained as a teacher, taught for 8 years in public elementary schools in Tulsa, and then ran my own reading clinic for 3 years, but personally – I would be lost without reading in my life.

I finished re-reading the 48 books in the “In Death” series by J.D. Robb (Nora Roberts) and have just received “Vendetta in Death” the 49th book just out in paperback. I’m really looking forward to diving into Eve Dallas’ world again.

This lady has lost 140 lbs and has kept it off for 6 years. I started reading the book over lunch and she’s a HOOT! Great sense of humor and has managed success without the regimentation required by many keto people. I’m interested to try her theory and see if it works for me, too.  (I keep missing my macro percentages and it really makes you feel like you just don’t get it.) So, I’m reading as fast as I can to get an overview and then will read more carefully to start using the details as soon as possible.
Being able to pick up a book and forget your problems for awhile, or learn to do something new, or get excited about a new way to get healthier, is richness beyond belief.
I will never forget sitting in the middle of my parents’ living room when I was 4 or 5. My mom was doing the New York Times Crossword Puzzle. My dad was avidly reading a book on archaeology. My brother was reading a whole stack of comic books. I looked from one to the other and finally said, “I wish to HELL I could read!”  Everyone stopped and looked at me. I expected my parents to come down on me like a load of bricks for saying a bad word. Instead, they looked at each other. My mom got a book, came down and sat on the floor with me, and began teaching me to read.
I will be forever grateful.

Wild and Wonderful

I hope you’re having a wonderful Wednesday.

It’s nice and fall-like here, with sunshine. It’ll get to 60 today. I’m lovin’ it!

My back is almost completely healed now, so I’m very grateful.  I’ll continue to do the multiple sessions each day until the soreness is gone.

I’m continuing to gather things for the first declutter donation.

AND I’m hoping to sneak up to my art room this afternoon.

The Great De-Clutter – Phase 2

A year ago we made a donation to the Disabled Veterans Thrift Store in Fort Smith every month, trying to help others while we cleared things out here, room by room.  The reason we have so much clutter is that we have lived in this house for over 30 years now. It has a good amount of storage space, so we have made generous use of it. Both my husband and I tend to save things, thinking “we might need it later.” Needless to say, we ended up with waaaaay too much ‘stuff.’

After a year of trying to declutter, we made good progress. So I sat on my laurels and we only did a few donations in 2019. Lately, it has become obvious that we need a Phase II of the decluttering project.

This time I’m starting in the kitchen/dining area/pantry, since I realized that with our following the keto eating plan, many of the things I used to use on a daily basis are gathering dust and taking up space.  I’m going to do a big reorganization of the kitchen and pantry, putting the things I use all the time in prime storage space and moving the other things onto high shelves in the pantry. Some things I will donate.

Assuming I ever finish in this area – a BIG job – I will then move from room to room, gathering things to give away, if they can be enjoyed by others, or thrown away.

I’m not going to set a once-a-month time frame this time. I’m going to take my time and try to concentrate on making the area work better for us.

So far, we have filled a long box with glasses that were cluttering the cabinets and the pantry.

Just Dance

The Enchanted Portal

I love this.

Last year at some point I decided to QUIT feeling buried in things I SHOULD be doing and to consciously incorporate some fun into every possible day, whether it be working outside in my flowers or veggies, playing in my art room, sitting in my recliner with coffee and a book, sitting on my porch or the deck just doing nothing….

I have to tell you it’s been a really good thing for me. I feel MUCH less stressed, and HAPPIER.

I’m still a slob and will never get awards for my house being clean all at the same time, but I realized that if I killed myself and things were ready for House Beautiful to come photograph, it really didn’t matter. My husband didn’t notice. The people who came didn’t say anything. I had the satisfaction of a job well done for a minute, but only a minute – for it seemed as if everyone – humans and animals alike – conspired to mess things up again as soon as possible. I figured I could 1) get angry that they were messing things up and yell at them, or 2) go for a reasonably clean most of the time and not stress over it. Since I adopted the latter I’ve been much happier, too.

Now I do something on my SHOULD or NEED TO list, and then I do something fun. It may be only for a short time before I do something else on the list, but then I consciously relax and do something for me.

It’s a happier life ‘dancing to the beat in my soul.’

Thoughts on a Tuesday 1-7-2020

Today is a beautiful day in Greenwood, Arkansas. It’s 43 degrees and sunny. It’s supposed to get up to 57 this afternoon. Hard to believe it’s January. I’m lovin’ it!

I’m delighted to report that my back is ALMOST back to normal this morning. I hurt myself three days ago, trying to put a big tub of Christmas stuff under our stairs. I had asked my husband for help. He said the tub would not GO under the stairs. I told him I knew it would because it was under there when I took the tub out in order to decorate. He continued to scoff, so I got angry and tried to PROVE to him it would go under there by doing it myself. STUPID MOVE. My anger resulted in 3 days of really bad back pain.  I have spent those days taking Tylenol, then switching to Ibuprofen, using Arnica gel on my back, using the heat pad most of the day and night, and doing multiple sessions of very careful yoga stretching. This morning I am MUCH better. Not 100% yet, but MUCH improved. My husband told me to punch him in the mouth – rather than hurting myself – the next time I get mad at him. :0)

I wracked up a lot of gold stars with all the yoga sessions the past three days, but the best thing is that I learned how I can help myself feel better through my practice. I was mainly thinking of it as a good way to loosen myself up, increase my flexibility, etc., but now I know it’s therapeutic and can help me get through an injury or insult to my poor back.

I had started gathering things to donate to the Veterans Thrift Store in Fort Smith before I hurt myself. So far, we have filled a long box with glasses that were cluttering up our cabinets and the pantry. The work was put on hold while I tried to recover from my stupidity, but I will GINGERLY continue with that today. I’m concentrating on the kitchen, pantry, and dining area (since they are all connected)  first. Hopefully, we can take our first donation by the end of this week.

I’m a Mess

I decided to start gathering things for our first donation to the Veterans’ Thrift Store in Fort Smith this morning. I got a big, long box full of stuff from the kitchen and then decided to put the large tub of Christmas stuff back under the stairs. Somehow, in trying to do that, I hurt my lower back.

Since then, I have taken two Tylenol, had my husband rub Arnica Gel on my lower back, and done a session of yoga stretching. That actually helped a bit, but I’m still pathetic.

I’ve gotten out my heat pad and will use that in a minute. I’ll also probably do another session of yoga later.

Most of all, I’m going to head the message and QUIT cleaning!

I hope your day today is better than mine…

Thoughts on A Saturday – 1-4-2020

Beautiful World

I told you yesterday that I learned a good, long-time friend of mine had died. Since then, I have heard from MANY friends locally and online, giving me kind words of consolation. I’m a very, very lucky person to know so many wonderful people. Thank you. It means a lot.

I spent time with MORE friends at Lunch Bunch yesterday. As usual, we shared what had happened since the last Friday, our plans, plus stories, hugs, and lots of laughter.  The daughter of one of my friends joined us from Fort Smith, so it was an especially nice gathering. We have been meeting every Friday for over 17 years now. There is no way to express how wonderful it is to have shared our lives, Friday by Friday, through good times and bad. Priceless.

This morning has been a character-building exercise for me. Our animals are conspiring to drive me crazy, one incident at a time. I can almost hear them laughing as they watch me mutter and handle the next thing, over and over. One example –

‘someone’ – whose name is probably Amber, our 94-pound yellow lab – apparently ‘nosed’ the small pile of firewood we had on the hearth, causing everything to tumble down onto the carpet, spreading debris everywhere. I started picking up pieces, then used a brush and dustpan, then a whisk broom, and finally the vacuum, to finally get the area cleaned up and back together again.  “Someone” else – probably named Molly (our elderly cocker spaniel/schnauzer cross) and Abby, one of our cats – caused me to also vacuum the hallway, two half-baths, the dining area, the kitchen, the pantry, and the utility room because of tufts of animal hair playing in the breezes. (The fact that I JUST vacuumed all that YESTERDAY makes me think they are smuggling in some other animal to shed an ‘entire animal’ each and every day…)

I’m having lots of fun in my art room.

I’m hoping to play in my art room more today, unless the animals come up with yet another mess for me to clean up.

A Beautiful Person

I had a feeling.  The feeling was stronger when I didn’t get a Christmas card.  Today her husband answered the email I sent, telling me we had lost her.

She was 6 years younger than I. She was my intern teacher a long time ago when I was teaching in the Tulsa Public Schools. She became my partner in the Reading Clinic I started when I finally gave up on the school system. We ran it for three years, teaching kindergarten through adult, helping many people together. She was my friend.

She traveled to Austin, Texas, married, and worked full time, so our busy lives made it so we didn’t communicate as much as we would have liked. Ours was the kind of friendship where we would talk – after not communicating much for a long time – and take up right where we left off, as if we hadn’t been apart.

She was a caring, pretty, SWEET lady. I loved her. A light is now gone from our world. I’m lucky I got to share that light for a little while.

Macros and Exercise

The short version is I have 5 pounds to re-lose before I’m on track again. An indulgence here, a bite there, and here I am. I would be disgusted, but I did it, knowing exactly what I was doing, and I enjoyed every bite of falling off the wagon.

Now that we’re officially into 2020, I’m starting to pay attention to my eating again and exercising.

The weather is helping in my efforts to do my exercising. The highs are in the low 50’s now so I don’t freeze my parts while doing my 35 minutes on the elliptical trainer in the garage. I take my MP3 player and earphones out, turn on the trainer, start my music, hit ‘User 1’ and ‘Start’ and I’m in the zone for the duration. My husband says I do it ‘too slowly.’ (He doesn’t do it at ALL, so I’m ignoring his opinion.) I’m doing it every day (when I’m being good) and I’m doing it in a way that doesn’t cause my joints to complain or ache, so I’m declaring a win.

In the afternoons, I am trying to do half an hour or so of Gentle Yoga stretches. My husband gave me a mat that he got for camping out a million years ago. It’s much thicker than the normal yoga mat, and I love the extra cushioning. Oddly enough, the only area in our house that is large enough for me to fully stretch in all directions is our living room. I again ignore my husband’s ‘helpful suggestions,’ doing my own routine of slowly stretching everything in all directions, breathing into each position, based on the guidance I received from Cat Kabira in the “Gentle Yoga” DVDs. I can really feel a difference if I do this every day. I feel looser, able to stretch in all directions more and more over time, lessen aches and pains due to other activities. If I’m lucky, I can do my practice without the help of our animals, who tend to want to lie down on top of me.

Since even at 72, I’m a little kid at heart, I reward my efforts with actual gold star stickers I bought on the net, putting one for each exercise on my desk calendar. It’s a bit embarrassing that I do this, but not enough to stop. I will always be motivated by gold stars…

I am doing a combination of intermittent fasting (not eating after 9 in the evening until about 1:00 or 1:30 the next afternoon) and then following my macros in the keto plan. A great website called Cronometer.com is helping me record what I’m eating as it applies to what I’m SUPPOSED to be eating for the day. My biggest problem at this point is that I tend to eat too much protein and not enough fat. I have read that eating too much protein can throw me out of ketosis. I’m working on adding more fat. I’ve tried eating an avocado each day, but I really don’t like them, so I’m trying to find other alternatives. I’ll keep reading on the net and see what else I can eat to make my eating match my macro.

Once I re-lose my 5 holiday pounds, I can hopefully get into new territory on my weight loss efforts. My best thus far is losing 43 pounds and 45 inches. My goal is another 30 lbs or so (until the BMI charts are happy with me) and whatever inches go with that. My goal is to be as healthy as I can for whatever my current age is for as long as possible. My husband and I both have health issues that improve as we follow the keto plan, so I’m hoping that 2020 is a great year for us.

Happy New Year 2020

We had a quiet evening last night. We ate some keto chili, and I celebrated by eating some no-sugar-added ice cream to end the old year happily.  Being old folks, we went to sleep right before midnight, so we don’t know if our backyard neighbors down in the valley shot off fireworks or not.

I found a wonderful way to celebrate each month of 2020.  Out of the goodness of my heart :0)  I bought an Australian Firefighters calendar. This is a fundraiser for them, and being SUCH a good person, I wanted to help. I’m going to share the photo each month, so that YOU can benefit from my donation, too.

Trials and Tribulations of Keto Bread Making

Keto Bread Trial # 1

I have been trying to find a keto bread recipe I can use as a go-to, always-on-hand bread that I can use as a substitute for sandwich bread, toast, or in place of a roll. I’ve really been missing bread, so I have baked 4 recipes in 3 days, to varying degrees of success.

I used to use my bread machine a lot. I got great, reliable results, but bread flour is a no-no on my keto lifestyle. I had put it away, on a top shelf in our pantry. I got two books on keto bread making, one that was for bread machine recipes and the other for keto bread and pasta.

The loaf above was my first try. This was a recipe for the oven. I sliced two thin slices for my husband and I to try. My husband was not impressed. I thought it was okay. I went into the kitchen to wrap up the rest of the loaf, only to find it GONE. Amber, our 94-pound 2-1/2 year old yellow lab, had eaten the entire thing! (She gave it 2 thumbs up.)

Since my husband wasn’t delighted, I decided to try another recipe.

Keto Bread Trial # 2

This was Trial # 2 yesterday using the bread machine. The loaf was only about 3 inches high, when usually the bread machine’s top is held open by the loaf of bread. I was disappointed, to say the least, but I’m not sure that my bread machine and the recipe from the book were on the same page. This was so dense I could have used it as a murder weapon. I threw it out.

 

Keto Bread Trial # 3

Today I decided that I would use a recipe from my bread machine book, substituting the good keto ingredients for the ones in the bread machine recipe; for example, almond flour for bread flour. I didn’t even take a picture of this dismal failure. I simply threw it out.

 

Keto Bread – Trial #4

This was was trial # 4 – a recipe I found on the net using the oven again. We again tried a slice. My husband’s reaction was that it was okay, but he didn’t finish the slice. I thought it was the best yet. I MIGHT be able to use it for sandwiches or toast. The flavor isn’t anything to write home about, so I wrapped this one up (before the dog could sample it) and will continue to eat it.I’ll continue looking for a recipe that really tastes good, as well as meeting my needs, if such a thing exists.

In reading on the net, I think the reason for some of the complexity here is that almond bread has no gluten. Xanthan gum is apparently a thickener. Some of the recipes use yeast and some don’t. I don’t know enough about the science of bread making to decipher which ingredients do what in the recipes.

If persistence will turn the tide, I will find a recipe for a bread that TASTES good, slices well, and will hold together for toasting or to make sandwiches.

Thoughts on a Monday 12-30-2019

It’s hard to believe 2019 is almost behind us. For our family, it was a mixed year of good and bad. My husband had a stroke, our son spent 3 months here with us helping us get to the new normal, and my husband is almost completely recovered now. We lost old friends and gained some new ones. But most of all, I’m grateful for what we have now. I’m intent on wringing every drop of joy I can out of each day.

 

I don’t know if you read my post on baking some keto bread yesterday. I added an addendum later, describing our 94 lb yellow lab, Amber, helping herself to the entire remaining loaf when we were lax about shutting the baby gate between the living room and the kitchen/dining area. She greeted me with a smile and a burp. I am planning to try another keto bread recipe today…

I’m delighted to report that SOME nice someone visited my newest Etsy shop, EyecatchingEarrings yesterday and favorited my shop. The same or a different visitor is now an ‘admirer.’ :0)

We are having a quiet day today – other than a guy who came up in a truck to tell us he and some other people would be wandering around working on electrical poles today. No appointments. No errands. Ahhhhhh!

Saga of the Quest for Keto Bread – 1

Today I actively started my quest for Keto Bread. Specifically, I’m looking for something I can enjoy when my husband is eating freshly baked rolls from the local bakery/deli, and also a bread I can slice and use for sandwiches. I can do without sandwich bread mostly, but every once in a while, I want a turkey sandwich, or a grilled cheese and ham, or some toast.

I tried a recipe called, “Basic Keto Loaf” from Zara Elby, Keto Bread & Pasta.

My initial reaction is that this can be my go-to when my husband is eating rolls. It slices nicely when cooled. The flavor and texture are nice. This will not work as my sandwich bread because the consistency is more like cake. It might be okay as toast. I’ll try it for that soon, when I fix bacon and eggs for dinner.

This book is interesting. There are LOTS of nice recipes for bread, crackers and breadsticks, and pasta dough. It will keep me busy for a long time trying various things. The recipes are well written. It’s pretty easy to judge servings. For example, this loaf serves 8. I ignored that for this test and just sliced two slices out of the middle, rather than dividing it up into 8 sections. She gives clear nutritional information for the servings.

So far, I’m encouraged and will try another recipe soon.

*ADDENDUM – I just went in to wrap up the bread for storage and it was GONE!  I asked my husband if HE wrapped it up, and he said, ‘no.’ THEN, our dog, Amber (2-1/2 year old 94 pound yellow lab) came up to me and burped, smiling at me. I guess there are TWO members of this household who thought the bread was pretty good, but I won’t be able to see if it’s good for toast until I bake some more…

I have been craving BREAD over the holidays. My husband gets freshly made rolls from the deli when we go grocery shopping. I can avoid the strawberry-dessert-cakes-and-ice-cream nightly, and I can avoid the bagels, but I’m REALLY missing rolls and sandwiches lately due to my keto diet. Because of this, I succumbed and ate turkey sandwiches at Thanksgiving and have been eating rolls. The result is I have gained 5 lbs from my lowest. UGH.

This isn’t EXACTLY what I saw this morning, but close. I’m disgusted with myself, but am now doing two things –

THING ONE – I ordered – and just received two KETO bread cookbooks!  One is Keto Bread and Pasta by Zara Elby, and the other is Keto Bread Machine Cookbook by Katie Simmons.  I will get busy trying recipes for rolls and sandwich type bread in both of these, hoping I can come up with something that solves my bread-craving problem.  I’ll share recipes with you if I find good ones.

THING TWO – I am back in the saddle again as far as doing 35 minutes on my elliptical trainer each day. I did my yoga stretches one day, but not yesterday, so I’m kind of HALF-WAY in the saddle again on the yoga.

I don’t make New Year’s Resolutions, but I AM promising myself to get fully with the program again so I can re-lose the 5 and then lose about another 30. I would really like to get to my goal weight in 2020 and then STAY there.
