LAZY LOW-CARB FINDS – I’m really happy to have found 4 things to share with you!

Great Value – Walmart
  • We have always driven to See’s Seafood in Fort Smith to buy fresh shrimp, maybe a couple of times per year – lately not that often. The shrimp is fresh, beautiful, but expensive for us, plus a lot of work for me. I found this Great Value x-large Frozen Shrimp at Walmart recently and I’m really happy with it. All I have to do is thaw it, pull the tails off, and serve to have a nice shrimp cocktail, which we enjoyed last night. The shrimp is already cooked, peeled, deveined. There is a jumbo size, too, I think, but this was really nice. We had a shrimp chef salad two nights ago and then the shrimp cocktail last night. I have another bag in the freezer. I’m looking for a good, low-carb recipe for a shrimp casserole. (2 carbs per 3 oz serving (about 5 shrimp) 0 sugar.)
  • I feel as if I hit the mother lode with the next three on the list of finds – KETO bread, ready to eat. I’ve tried to make myself make keto bread, rolls, etc. from recipes. I’m just too lazy. I don’t want to spend all day, every day, fixing food. I just want to lose the lard, get more fit, keep the lard off, without a whole lot of hassle. Yesterday we shopped at our local Harps grocery. I checked the bread section, not really expecting to find anything. I found KETO sandwich bread, KETO hot dog buns, and I just found out there are KETO hamburger buns available, as well. AND, just to put frosting on the cake, the brand name is “LEWIS Healthy Life.” You can’t beat THAT with a stick! The hot dog buns are 1 carb per bun. The sandwich bread is 0 net carbs per slice. The hamburger buns are 1 net carb per bun. All are high in fiber, something I’m trying to increase, so it’s a win/win. Since bread is one of the main things I’ve been missing, I’ve been eating Mission 0 Net Carb Tortillas in place of bread, and they’re all right, but this will be a really nice change.

Accountability

I’ve been logging in at MyFitnessPal.com daily for 40 days, trying to be more mindful of what I’m eating, my exercise, my water drinking, etc. I’ve been following the keto eating plan for approximately half that time.

I’ve decided to make myself accountable once a month to keep my head on straight and stay on my way to many goals. I don’t have any particular goals on weight and measurements. I need to lose my lard – a lot of it – but I’m making mini-goals in 5-pound-increments to keep it doable in my mind. I’m trying to practice my yoga daily for half an hour, adding working in the yard outside, or heavy days of cleaning inside, lately, or future plans of using my elliptical machine in the garage when I can, or adding exercises with dumbbells to add strength, all in an effort to be stronger, more flexible, with better balance, less apt to fall.

Toward these goals, I am down 23 pounds since my heaviest. I have two pounds to go to meet my latest 5-pounds-lard-off goal.

Today I measured, since I have finished a full month of daily yoga in March plus another several days starting in February. (Can you tell that the sparkly stars on my calendar are a big motivator for me?)

Measuring shows a loss of .3 inches from my hips and a loss 1.5 inches from my waist.

So, bit by bit I’m making some slow progress. (I have to tell you that last night my husband and I were so grateful that we were still alive, relatively in one piece, and relatively healthy that we ‘celebrated’ with a dish of no- sugar-added vanilla ice cream. My husband added some fruit to his and I added some chocolate syrup to mine. This will be the last celebration for the foreseeable future. :0) )

I am now promising myself (and you) that I will report progress – I hope – again at the end of April.

Isn’t this glorious?

I really wanted to sleep later this morning, but my bladder insisted I get up. I’m still feeling a bit bleery-eyed, drinking coffee to try to wake up my system.

I’m feeling hopeful this morning, bleery-eyed or not, that the emphasis on lowering my carbs is getting the attention of my scales. I’ve lost 3-1/2 pounds since I started my new regimen. (No handsprings or anything, since I have a gazillion more to go, but it’s NICE to have the scales laughing a bit less several mornings now. )

I’m going through my Simply Keto recipe book, finding new recipes I plan to try, adding to my grocery list. I really like the fact that Suzanne Ryan doesn’t glory in spending time in the kitchen. Her recipes are simple, using ingredients you can readily find in regular grocery stores, and they don’t take a lot of prep or time. Just perfect for me.

Recently I used my spiralizer to make ‘zoodles,’ or pasta noodle type stuff from zucchini. The one zucchini yielded enough for three 1-cup servings. I ate one with my spaghetti sauce and froze the other two.

Love and Lemons

Today I’m going to make ‘cauli-rice,’ a rice substitute from cauliflower. I’m hoping that my efforts will yield enough for several meals. I’m going to cook some stew meat in my slow cooker, starting at lunch time, then combine that with Paul Newman’s Alfredo Sauce (3 carbs per serving.) I’ll serve that over regular rice for my husband and over the cauli-rice for me.

I have also discovered a way to work with the MyFitnessPal program better for ME – when I’m eating the number of calories I CAN eat, it tells me that, if I keep eating the same way, I’ll weigh “X” in 5 weeks. (The actual results of this is that I don’t lose weight.) If I eat fewer calories, it tells me, “You’re not eating enough.” I used to go find some foods to add to get the calories up. Now I list what I’m comfortable eating for the day, plus my exercises. If it says I’m not eating enough, it means that there is a chance the scales will show a bit less the next morning. :0)

I will earn my 7th star on my calendar this afternoon for daily yoga stretches. That feels good. My calendar is sparkly with the stars, feeding my spirits emotionally, and the yoga practice is making my body stronger and more flexible. Win/win.

So, feeling positive – even though still a bit bleery-eyed – on a beautiful Sunday. Hope YOUR Sunday is a good one, too.

Thoughts on a Saturday – June 20, 2020

The sun was out earlier here, but now it’s overcast. We have an 80% chance of storms today – the first day of summer. All people and animals are good today, and we’re hoping for a quiet weekend.

I pre-ordered the latest paperback “In Death” series book by J.D. Robb (Nora Roberts) awhile back. It comes out in July.  To celebrate this, I’m enjoying my dive into the world of Eve Dallas, Lieutenant in the NYPSD in the year 2058+.  I’m picking up details I missed the first time, as well as just enjoying inhabiting her world – so different from mine. I’m re-reading book # 23 right now (out of 50) and will be ready to add the newest book to my collection when it arrives. (I’ve also pre-ordered the paperback of #51 which will be out at the end of December.)

 

 

 

 

 

 

 

 

 

 

 

 

 

 

We are due for a rainy weekend. I’ve been working hard in the yard, trying to keep the weeds at bay. I see evidence that the ‘wild’ would simply take back the land we have enjoyed for over 30 years now if I lost my determination to win the war. The civilized part of our yard looks pretty good now. My next focus will be on weeding my veggie garden and my flower planters around the yard. I’ll enjoy it if I get a bit of a break from the work this weekend.

I heated up the leftover spaghetti with meat sauce I made this week for dinner last night. I used the spaghetti made from chickpeas (brand name Banza) that has half the carbs of regular pasta. It’s still a splurge, but I sure enjoyed it. I made garlic toast for my husband with hot dog buns, and used the keto bread I made for mine.)  My husband said, “This was delicious. Thank you!” :0)  We will have leftover pork chops tonight with a side salad.

I will continue the longer, slower sessions of gentle yoga I started yesterday. I’m concentrating on relaxing – harder to do these days – and S_T_R_E_T_C_H_I_N _G everything I have slowly and thoroughly. I’m feeling better because of it.

Thoughts on a Friday 9-20-2019

 

I’m delighted to tell you that Mother Nature finally smiled, and it’s raining!  She smiled on us a bit yesterday afternoon while I was playing in my art room, and we woke up to rain this morning. I was tempted to play in it when we walked from the car to the restaurant for Lunch Bunch, but I resisted the urge. :0)

Lunch Bunch today was a whole table-full. One of our long time good friends lost a son this past week. Family came in for a memorial yesterday and came to Lunch Bunch today. Another good friend joined us. Though the reason for the family gathering was heartbreaking, the love – and even some laughter – flowed. Over the past 17 years we have celebrated the good things and helped each other through the bad things. Our core is strong.

I am on Day 18 of practicing my yoga daily. Though my back is still complaining, I can FEEL my body loosening as I practice. I can’t say I look FORWARD to my sessions, but I feel GOOD that I’m doing something daily that will improve my health, flexibility, and general attitude.

This is Day 3 of my ‘getting serious’ about staying at 20 carbs or under daily on my Keto eating plan. On Wednesday I stopped eating the no-sugar-added Blue Bunny Freedom vanilla ice cream. I’ve been having a scoop for dessert nightly while my husband has been having strawberries and cakes with his. I quit playing ostrich and looked at the label – 16 grams of carbs – EEEEK! – and I get 20 or less for the day. I have now substituted a small handful of pecans. I don’t know if I’ll have the “Keto-Flu” or not. I know I’m NOT walking around with my stomach thinking my throat has been cut, so that’s a HUGE good thing for me. I’m also trying to get serious about drinking lots more water. I’m mostly there, but fudge the numbers sometimes. I’m also taking Magnesium Glycinate, 400 mgs, one tab daily for Bone, Cardiovascular, and Muscle support.  Hopefully, I’ll be able to report that I’m finally off the plateau and on the downward slope again.

I started painting a long-sleeved tee in my art room yesterday. I have a nice design in my head. The jury is still out as to whether the end result will bear any resemblance or not to my plan. I’m going to get back upstairs in a few minutes, turn on my music and PLAY.

Thoughts on a Thursday 9-10-2019

My husband and son were out checking the irrigation system at about 7 pm last night (all is well) and saw 5 hummingbirds at one time! That’s the most we’ve seen at once this whole summer.  A sight like that makes everything right.

I told you yesterday that I was really trying to get serious about eating Keto and losing more of my lard. Thanks to my friend, Robin, I’ve signed up at a new website called CarbManager.com  I signed up for their Basic service, but they have a premium service, as well that I may consider in the future. My big thing on not switching was that I couldn’t find a carb tracker that would accept recipes from other places and let you log them in for the day without having to list each ingredient separately. This one did fine with Suzanne Ryan’s “Sausage, Egg and Cheese Bake” from her book Simply Keto easily. They have a good section that walks you through their website, explaining how to do things. The website on my computer links up with the app on my phone now, so that’s really handy, as well. Yesterday I ate 18 grams of carbs. They did NOT give me a message saying I wasn’t eating enough, so I was happy about that, too!

I found a wonderful artist who makes baskets that will make you drool. I’ll be sharing them with you in a bit.

Today I’ll make time for my yoga practice this afternoon (Day # 17) and I plan to play in my art room!
