


I just finished cutting up the broccoli and putting it into freezer bags. I’m not sure what to expect on the remaining plants. Sometimes they will sprout ‘side shoots’ with a bit more broccoli, so I’m leaving them in for now.
Later I’ll go harvest as much spinach as I can. I’ll keep going out, harvesting, and processing the early spring plants until the job is finished, hopefully, by the end of the weekend.
One nice surprise – I have several little bitty heads of cauliflower that are still looking good at the moment! When I told my husband, he looked at me with a bland look on his face, saying, “Oh, GOOD.” (He doesn’t like cauliflower. :0) )
We’ll have lunch and I’ll rest a bit before going to get the spinach.
What do you prepare with broccoli? I don’t love broccoli, unless I make cream of broccoli soup or a soufflé/flan. I make this recipe every now and then when I have broccoli, cauliflower, and spinach. Also, I substitute gluten-free flower for regular all purpose flour. 😺

Thanks for these, Susy. I eat broccoli, cauliflower and spinach in salads. I also saute broccoli and spinach in olive oil and serve with garlic and bacon bits. I save the cauliflower for cauli-rice.

The flan recipe is really tasty and very easy to prepare! Sometimes, I even add cubed ham and other veggies (carrot, peas, green beans, corn) in the mix. I tried the cauliflower rice once and didn’t care for it. The only way I really like cauliflower is as a creamy soup (like with broccoli) or in soufflé the way my mom used to make it! Your idea of sautéing broccoli and spinach in olive oil sounds good, too! My paternal grandmother used to make rice and add spinach to it when it was almost ready, and, to this day, that one is still comfort food to me! 😺
